Egg Recipes for Easter Day

How do you like your eggs?

I believe this week, you will have many leftover eggs, and the humble eggs is one of nature's most nutritional foods and really easy to mix in any kind of recipes. Egg itself is a healthy ingredient and it is after all the symbol of life itself, a new beginning.

Eggs are an excellent source of protein to help keep skin supple and muscles strong. I love eggs, when I was still a child, I could eat 6 to 10 eggs per day, that's what my granny told me :) Eggs provide a wide range of vitamins and minerals.

How do you like your eggs? Well, you can make many different meals with eggs, like boiled eggs, fried eggs, eggs in sauces, in cakes and even in ice cream. There are many ways to cook eggs, frying, boiling, baking, poaching, and steaming. Cuisines from all over the world may use eggs in varied and distinctive ways, like the French Souffle, Cawan mushi in Japan (steam savory custard), Gelato and Frittata Omelet from Italy, English custard, the Spanish Omelet, Australian pavlova, and also in many Indonesian's dishes.

In traditional Indonesian cuisines, there are many ways to cook the eggs, like our Egg Martabak (like super big crispy omelet with eggs, meat, vegetables for filler), siomay (fish dumpling with boiled eggs and peanut sauce), eggs in fried rice, eggs in noodles, soto ayam (sour and spicy chicken soup), and many more.

1. Telur Balado (Eggs with Tomato Sauce and Chillies)

Ingredients
8 eggs, boil them and peel, set aside.
2 cloves of garlic
10 shallots
5 cm ginger
10 red curly chillies
2 large red tomatoes, chopped
1 tsp of sugar
Hand full of fresh basil
Salt and pepper to taste

How to cook

  1. Put garlic, shallot, ginger and chillies into a chopper. Run a few minutes until it become rough paste.
  2. Heat the fry pan.
  3. Add olive or cooking oil, wait for a minute and add the paste. Cook for 5 minutes.
  4. Add the chopped tomatoes and sugar. Cook for 5-7 minutes until you have nice sauce texture and smell good.
  5. Season with salt and pepper, add fresh basil.
  6. Ready to serve with the boiled eggs, steamed rice, and vegetables.

2. Sweet and Sour Baked Eggs

Ingredients

2 tablespoons butter
2 cloves garlic, minced
10 cm scallion, sliced thin
100 gr no fat ground beef
1/4 tsp pepper powder
1/2 tsp fine salt
150 g fresh mushrooms, sliced thin
50 gr frozen peas, soaked, drained
1 tablespoon margarine for greasing
3 eggs, boiled, peeled, sliced crosswire 1 cm

Layer above

4 eggs, beaten
1/2 tsp fine salt
1/4 tsp pepper powder
50 gr grated cheese

Sauce

100 ml beef broth
250 gr red tomatoes, brewed, peeled, seeded, crushed
1/2 tsp fine salt
1 tablespoon granulated sugar
10 cm scallion, sliced oblique
2 teaspoon cornstarch, melted with a little of water

How to cook
1. For the filler

a. Heat butter and saute garlic and onion until smell good. Add the ground beef, stirring. Season with pepper and salt, stirring until the meat's color change. Add the mushrooms, peas, and cook well.
b. Take the heat-resistant bowl, diameter 17 cm and 7 cm high, basting margarine. Places slices of boiled egg in the bottom of the container, pour the contents of the dough.

2. Upper layer
a. Beat the eggs, add salt and pepper, put on top of the filler. Add grated cheese on top of it.
b. Bake in oven until brown. Lift, serve with sauce, steamed rice or potatoes.

3. Sauce
Simmer the broth, add the smooth tomatoes, add salt, sugar, and onions. Thicken with cornstarch liquid. Stir well until the sauce cooked. Lift.
 
And the most simple egg recipe I always eat is the egg salad sandwich :) You just need eggs scrambled, some mayo, fresh tomatoes, grated cheese, celery, and 2 slices of whole grain bread, or any kind of bread. And you may add any kind of your favorite ingredients for the egg and salad sandwich.

How do you know if your eggs are fresh ?

  • Fresh eggs normally have a rounded, firm yolk and you can see it sits ups nicely.
  • The white has a thicker gelatinous layer that clings all around the yolk and a thinner outer layer.
  • Another fresh test is to place the egg in a tumbler of cold water, if the egg sinks to a completely horizontal position, it is very fresh. If it is in a semi horizontal position, it could be up to a week old, if the egg floats into a vertical position, then the egg is definitely stale.
